			<content:encoded><![CDATA[<p>There&#8217;s nothing better than hearty foods to chase away winter chills, and as a young man in Northern Ireland, Colum Egan relished the warming effect of his Mother&#8217;s homemade soup. Today, as the master distiller of Old Bushmills Distillery in County Antrim-the world&#8217;s oldest Irish whiskey-Egan still enjoys &#8220;heating his bones&#8221; with a big bowl of soup.</p>
<p>&#8220;I think soup was bred into me by my mother. She says that there is both eating and drinking in it,&#8221; says Egan.</p>
<p>Another of Egan&#8217;s favorite dishes is salmon. &#8220;I love the thought of eating wild salmon from the very river that is the source of water for our Irish whiskey.&#8221;</p>
<p>Chefs around the globe have long turned to spirits to add levels of complexity and flavor to their favorite recipes, so it should come as no surprise that Irish whiskey has a place in modern recipes that will delight the palate long after St. Patrick&#8217;s Day.</p>
<p>But for those seeking tradition, Egan shares his favorite recipe for Irish coffee. Pour 11/2 ounces of Bushmills Original Irish Whiskey into a warm glass. Fill with strong black coffee and top with whipped cream.</p>
<p>Bushmills Wild</p>
<p>Mushroom Soup</p>
<p>1 oz. dried porcini mushrooms (soaked in warm water and finely chopped)</p>
<p>1 cup warm water</p>
<p>olive oil</p>
<p>butter</p>
<p>2 leeks-finely sliced</p>
<p>2 shallots-chopped</p>
<p>1 clove garlic-chopped</p>
<p>8 ozs. fresh wild mushrooms -chopped</p>
<p>4 cups beef stock</p>
<p>1/2 tsp. dried thyme</p>
<p>1/2 cup double cream</p>
<p>Salt &amp; freshly ground black pepper</p>
<p>Sprigs of fresh thyme to garnish</p>
<p>3 capfuls Bushmills Original Irish Whiskey</p>
<p>Serves four</p>
<p>In large saucepan, sauté leeks, shallots and garlic in butter and oil until soft, stirring frequently (about 5 minutes).</p>
<p>Add wild mushrooms and stir over a medium heat until they begin to soften. Add beef stock and bring to a boil. Add the porcini, soaking liquid, thyme and salt and pepper. Lower the heat, half cover the pan and simmer gently for 30 minutes, stirring occasionally.</p>
<p>Pour about 3/4 of the soup into a food processor and blend until smooth. Combine with remaining soup, add heavy cream and heat through. Check the consistency, adding more stock or water if the soup is too thick. Add 3 caps of Bushmills Original Irish Whiskey. Season to taste. Serve hot, garnished with sprigs of fresh thyme.</p>
<p>Peppered River Bush Salmon With Bushmills Whiskey Cream Sauce</p>
<p>1 Tablespoon black peppercorns, crushed</p>
<p>1/2 Tablespoon white peppercorns, crushed</p>
<p>2 6-oz. salmon steaks</p>
<p>1 teaspoon Dijon mustard</p>
<p>freshly ground sea salt</p>
<p>butter</p>
<p>1 Tablespoon Bushmills Original Irish Whiskey</p>
<p>1/2 cup heavy cream</p>
<p>1 tablespoon chopped fresh chives, plus extra to garnish</p>
<p>Serves two</p>
<p>Combine crushed peppercorns. Cover salmon steaks with mustard and press peppercorns into the cut sides of the salmon to form thin coating. Season with salt.</p>
<p>Melt butter in a hot pan. Add salmon steaks. Reduce the heat to medium and cook on one side, until browned, about 3 minutes.</p>
<p>Increase heat to medium high, turn over salmon. Add whiskey. Cook rapidly until the whiskey has been reduced. Add the cream and stir quickly, scraping up any bits that are sticking to the bottom of the pan. Bring to a boil.</p>
<p>Cook until the sauce starts to thicken (1-2 minutes), then season to taste with salt and pepper. Stir in the chopped chives and serve immediately, garnished with the extra chives.</p>

			<content:encoded><![CDATA[<p>When many people think of beignets, they think of those wonderful, soft, pillow-like pastries sprinkled with confectionery sugar, served at Cafe Du Monde in the Old French Quarter.</p>
<p>As New Orleans gets back on its feet following Hurricane Katrina, I&#8217;d highly recommend a visit to the Crescent City to taste the real thing.</p>
<p>In the meantime, here&#8217;s a different twist on a New Orleans favorite that you can try at home. It&#8217;ll have your family and friends saying, &#8220;Laissez les bons temps rouler.&#8221;</p>
<p>Ingredients:</p>
<p>4 cups LouAna Peanut Oil, for that nutty taste with no cholesterol</p>
<p>3 cups flour</p>
<p>2 cups milk</p>
<p>1 tablespoon baking powder</p>
<p>1 tablespoon seasoned salt</p>
<p>1 tablespoon garlic</p>
<p>1 teaspoon thyme</p>
<p>1 teaspoon Louisiana Hot Sauce</p>
<p>1 lb. lump crabmeat</p>
<p>2 cups fresh corn, cooked</p>
<p>1/4 cup parsley, minced</p>
<p>1/4 cup green onions, sliced</p>
<p>Directions:</p>
<p>1. Heat peanut oil in frying pot until oil reaches 350°.</p>
<p>2. In a large bowl, blend together flour, milk, baking powder, seasoned salt, garlic, thyme, and hot sauce and stir until batter is formed.</p>
<p>3. Stir in remaining ingredients until all are incorporated. Be careful not to break up lumps of crabmeat during the process.</p>
<p>4. Drop batter by the spoonful into hot grease, being careful not to splash yourself.</p>
<p>5. Cook beignets for 2 to 3 minutes after they float to the top of pot, flipping occasionally.</p>
<p>6. Serve with your favorite dipping sauce.</p>
<p>Yield: Approximately 2 dozen beignets.</p>

			<content:encoded><![CDATA[<p>The health benefits of olive oil in the Mediterranean diet has become more than a novel observation. Clinical research is substantiating healthy benefits, but the gourmet tastes and flavors are bonuses well worth mentioning too.</p>

<p>Highly favored as a cooking oil, or for use in a variety of classic dressings, olive oil is being touted in some quarters as a delicious companion to good health. Research on the health benefits of olive oil is impressive, so is the affects of the Mediterranean diet.</p>
<p>Recent Findings</p>
<p>Olive Oil as a Cholesterol Reducer</p>
<p>Compared to American cuisine, especially the snack and fast foods prevalent in the US, the Mediterranean Diet has intrigued the medical world. The European Journal of Clinical Nutrition has published findings that indicate the introduction of olive oil into our regular diet has demonstrated a reduction in LDL cholesterol (bad cholesterol). This is significant because once LDL cholesterol has oxidized it often results in artery rigidity and accompanying heart disease.</p>
<p>Olive Oil in Cancer Prevention</p>
<p>In a comparison study at the University Hospital Germans Trias Pujol in Barcelona there seems to be an indication that the health benefits of olive oil may also be useful in the prevention or slowing of cancer cells. In the study, lab rats were introduced to a carcinogen that resulted in cancerous tumors. The study provides evidence that a diet similar to the Mediterranean diet, rich in olive oil prevents colonic carcinogenesis reducing precancerous tissue which resulted in fewer tumors when compared to a controlled sample of rats ingesting foods containing other types of cooking oils.</p>
<p>Researchers at Oxford University in England have seen indications that olive oil may actually be as good for our digestive system as fresh fruit and vegetables in preventing or reducing the incidence of colon cancer. While red meat seems to be linked to the development of colon cancer, fish and olive oil seemed to reduce the incidence of colon cancer. The reasons behind this phenomena are still being considered, but it is believed that the olive oil may help regulate the bile acid in the stomach while increasing useful enzymes within the stomach that contribute to optimal colon health.</p>
<p>Olive Oil and Heart Health</p>
<p>The American Heart Association has also noted that consumption of olive oil has “clear health benefits”.</p>
<p>Olive Oil and Lower Blood Pressure</p>
<p>By substituting virgin olive oil for other fats within your diet, the Archives of Internal Medicine indicates a substantial reduction in drug dosage requirements for the management of high blood pressure. Initial findings indicate dosage reductions could be as high as 50%.</p>
<p>Additional Findings</p>
<p>By lowering the level of LDL cholesterol (bad cholesterol) there is an increase of the HDL cholesterol (good cholesterol). The antioxidant effects of olive oil have also been widely reported and are effective in reducing free radicals within the body that may prove to be a causal agent in pre cancerous and cancerous growth.</p>
<p>Additional health benefits of olive oil may be found in a Mediterranean diet which explores the varied uses of olive oil in both food preparation as well as additional balanced meal choices. Combined, olive oil and appropriate food choice seem to enhance the overall health of those subscribing to the Mediterranean diet.</p>
<p>Final Word</p>
<p>While studies remain ongoing, it is encouraging to note that something that has long been noted for good taste may also be a link to positive health benefits and longevity of life. An adaptation of the Mediterranean diet may be a healthy, yet palatable change well worth considering.</p>

			<content:encoded><![CDATA[<p>Here&#8217;s some sweet news: people all over the country can still enjoy that crown jewel of New Orleans, the King Cake, this Mardi Gras season.</p>
<p>For those who don&#8217;t know, a King Cake is an oval-shaped bakery delicacy-a cross between a coffee cake and a French pastry that is as rich in history as it is in flavor. It&#8217;s decorated in royal colors or Purple for Justice, Green for Faith and Gold for Power: These colors were chosen to represent a jeweled crown honoring the wise men who brought gifts to the Christ Child on the Epiphany. A tiny plastic baby is hidden inside. Whoever gets the piece with the prize is named &#8220;King for a day.&#8221;</p>
<p>Some of the most popular King cakes are those created in New Orleans at the famous Randazzo&#8217;s Camellia City Bakery. Despite the devastation of Hurricane Katrina, the store recently reopened its doors and took part in a special program with DHL to bring a taste of home to displaced New Orleanians, residents and others for Mardi Gras.</p>
<p>Explained Tricia Zornes, owner of Randazzo&#8217;s, &#8220;Continuing local traditions like Mardi Gras helps revitalize the New Orleans economy, improves morale and shows the world that we can rebuild and re-establish the culture that has made New Orleans special.&#8221;</p>
<p>To help the rebuilding and celebrate the reopening, shipping company DHL developed a festive, co-branded shipping box, specially designed to open from the top to protect the rich icing and traditional shape. In addition, according to Zornes, the shipper&#8217;s sales representative offered his own time and effort to rebuilding the bakery after nearly everything was lost, from the valuable baking equipment to the building itself. &#8220;In addition to helping us create a new distribution process, he went beyond the call of duty in offering to help paint, or do any odd jobs that would help us get up and running quickly,&#8221; said Zornes.</p>
<p>&#8220;DHL has been committed to leveraging its resources to support disaster relief and long-term reconstruction along the Gulf Coast, and is now pleased to be able to support the private sector in rebuilding their businesses and their livelihoods,&#8221; said Kay Hart, Senior Vice President, Corporate Communications, DHL Americas.</p>

			<content:encoded><![CDATA[<p>How about teaming up your favorite meal with the best of wine this weekend? It sounds a great idea but don’t you think you may overindulge? Well, you may not mind this but what about the hangover you have to face, the other morning. How about spending you entire Sunday afternoon sitting inside the bathroom, with one hand on your forehead and the other on your stomach? Scary isn’t it?</p>
<p>Hey, hold on! I am not trying to scare the life out of you. I am just showing you the real picture of a hangover that you may require to face the following day after you have overindulged in your favorite wine.</p>
<p>This sounds really bad but don’t worry, there are many tips you can follow in order to get rid of a wine hangover. All you need to do is to follow the instructions given below:</p>
<p>a) Water, water and water:</p>
<p>Water is the key to get over the wine hangover. Drink plenty of water. Alcohol has a tendency to dehydrate your body. This is the main reason that most people end up having a lot of liquids in the form of plain water, lemon water, coffee and black tea without having pee for a single time. If you want to stay away from the temptation of overindulging in wine, the best way is to have a glass of water for each glass of wine you desire to have. Wine is a great source of water, but the presence of water tends to produce adverse effects on the body. Hence, it is necessary to keep hydrating your body with water.</p>
<p>b) Binge in:</p>
<p>Sounds great! Believe me, it really works. Eat your favorite meal or some snacks an hour before a drink. This will save you from getting involved into overindulge and the hangover. The meal or snack should include bread or pasta.</p>
<p>c) No prescription drugs:</p>
<p>So you want to save money! It’s a good idea but you should not save money via mixing your glass of wine with prescription drugs for more effects. This will only damage your body. Drink less if you really want to save money.</p>
<p>d) Milk:</p>
<p>Drink a glass of milk prior to consuming wine. This will provide a protection coat to your stomach and helps you absorb the alcohol in the wine.</p>
<p>e) No salt:</p>
<p>Salt will prove dangerous as it tends to maximize the process of dehydration. You should stay away from salt when having margarita&#8230;</p>
<p>f) An aspirin:</p>
<p>An aspirin will help you to remove headache. Avoid taking ibuprofen or paracetamol. These medicines usually have adverse effects on the body especially after the consumption of wine.</p>
<p>g) Avoid dark drinks:</p>
<p>The major hangover you experience may be due to combining red wine with whiskey. You should mix whiskey with soda or water. Avoid mixing it with cola and tonic.</p>
<p>Hangover is due to over indulgence in wine. Try to stay away from it. Follow the instructions mentioned above you would feel better after a wine party with your friends.</p>

<p>1) Coffee is considered an aphrodisiac. Because it contains a high dose of caffeine and other various alkaloids, studies have shown that coffee can increase stamina and the overall length of intimate sessions.</p>
<p>2) Although coffee has been a part of the Arab culture for thousands of years, it did not become part of the western world until the 1500s. Before that time, priests believed that coffee was a drink of the devil. Pope Clement VIII finally ended this line of thinking by taking a sip of coffee and then giving it his blessing.</p>

			<content:encoded><![CDATA[<p>The Christmas season is upon us, and stress has begun to fill the air! Sometimes we just don’t have the time to be creative! As giving should never be a source of stress I felt the need to share my personal gift ideas for Christmas this year for those who find it difficult to get out of the kitchen. I hope you find inspiration!</p>
<p>1. Cookware. Every cook loves new cookware. No surprise there, but there are ways to make this gift more special. For example a new sauce pan would be a wonderful present for under the Christmas tree, but in addition, find a great sauce recipe to be used as a stocking stuffer along with all the required ingredients!</p>
<p>2. Flavored Oils and Vinegars. A sure way to create a new or improve an old dish!<br />
New oils and vinegars are always a treat for a cook, you can never have enough! Walnut oil, Avocado oil, Truffle oil, simply take a look around your local specialty food store and you will be amazed at the variety today!</p>
<p>3. Plastic Storage Containers. They must be of the best quality which are able to go into the freezer, dishwasher, and microwave! I don&#8217;t know how but these containers always seem to disappear and you can never have enough of them or enough sizes. Why not buy several different shapes and sizes but fill them full of special nuts or candies to make this gift more special than plain old plastic!</p>
<p>4. Liquor. Although we all like to have a little Christmas cheer, there is another wonderful use for liquor in the kitchen. It is essential for creating beautiful demi-glazes for your favorite meat dishes and most likely your cook at home will not splurge on such luxurious liquids. So why not help your favorite chef out and purchase a few bottles of liquor to cook with! Brandy, Sherry, Bourbon and Madeira are all fantastic to use.</p>
<p>5. Wine. Like liquor wine is also essential for deglazing pans and creating incredible sauces. Again, why not include a recipe as a stocking stuffer as well. Inspiration is always welcomed by any cook.</p>
<p>6. Coffee &amp; Tea. Most kitchen lovers love coffee if not to drink, to cook with. So why not create a specialty coffee gift basket? It&#8217;s easy to find local free trade coffee in you neighborhood specialty food store and while you&#8217;re there by some cinnamon sticks, honey, flavored syrups etc. Why not also throw in some specialty coffee mugs and some liquors such as Baileys or Kahlua. What a treat!! Tea is also widely used in kitchens today. Instead of boring brines, use tea instead!</p>
<p>7. Cookbooks. Again another &#8220;no-brainer” but if they truly love to cook then they LOVE cookbooks. We never get tired of cookbooks, but be sure to find the best ones. Look for a specialty cookbook store and you&#8217;ll have a fantastic gift in your hands.</p>
<p>8. Microplane. If you’re special chef does not have one then here is another must have kitchen item. They are inexpensive and vital when adding or enhancing flavor in dishes. Why not combine a Microplane with several of its favorite counterparts like whole nutmeg, whole cinnamon, whole star anise etc. That way your chef can get right down to business!</p>
<p>9. Appliances. Maybe not an oven or a fridge but why not a new electric mixer or Panini press? Here’s a shopping tip… when wanting to purchase any of these items this year buy on-line! Small appliances are almost always less expensive when purchased on-line and shipping is often waived as well. Stores charge a premium this time of year so save yourself time and money and buy on -line!</p>
<p>10. Tableware. If they love to cook then they love to entertain. Why not find beautiful glassware, or placemats, or service plates that they can show off their creations with. Unique paper napkins make great stocking stuffers and linen napkins with gorgeous napkin rings are always a treat.</p>
<p>So don’t let stress take the fun out of Christmas this season. There are truly plenty of ways to put smiles on faces this year. And for one last suggestion: make your own Specialty Gift Basket! Create your own gift basket by combining several of the above ideas. Now that is an incredible gift for any kitchen lover!</p>

			<content:encoded><![CDATA[<p>Pizza, the way we know it today, is a derivation from focaccia (from the Latin word for fire), flat bread that has been prepared since antiquity in different forms and garnished with herbs, olives, fat, raisin, honey, and nuts.</p>
<p>The word pizza in Italian identifies any type of flat bread or pie—fried or baked. Although you’d find many types of pitas or pizzas around the Mediterranean, it is in Naples that pizza in the form we know it today first emerged, after the tomato appeared on the table in the 1700s. Naples has many records of pizza since around the year 1000; the first mentions call these flat breads laganae, and later they are referred to as picea. In those times, pizzas were dressed with garlic and olive oil, or cheese and anchovies, or small local fish. They were baked on the open fire and sometimes were closed in two, as a book, to form a calzone.</p>
<p>In Naples is also where the first pizzerias opened up, with brick wood-burning oven, covered with lava stones from the Mount Vesuvius. The chefs of those times ignored pizza because was considered a poor people’s food, but the new combination with the tomato, when it entered the kitchen around the 1770s, must have raised some curiosity, even in the royal palace. Ferdinand I Bourbon, King of Naples, loved the simple food of the people and went to taste the pizzas made in the shop of Antonio Testa. He liked it so much that he wanted pizza to be included in the menu at the court. He failed after the opposition of his wife, Queen Maria Carolina. His son Ferdinand II also liked all kind of popular food and he loved pizza to the point that he hired Domenico Testa, son of the now famous Antonio, to build a pizza oven in the royal palace of Capodimonte.</p>
<p>Pizza became very popular, earning its place in Neapolitan folklore. Simple and economical, it turned into the food for all people, even sold on the streets, as shown in many illustrations of the time.</p>
<p>A famous episode extended the popularity of pizza beyond the limits of the city of Naples. It was 1889, and Margherita, queen of Italy, was visiting the city. She was told about pizza and wanted to taste it. A famous cook by the name of Don Raffaele, helped by his wife Donna Rosa, was invited to cook pizza at the royal palace. They prepared three pizzas, typical of that time: one with cheese and basil; one with garlic, oil, and tomato; and one with mozzarella, basil, and tomato. The queen, impressed by the colors of the last pizza, which resembled the national flag, preferred that one. Since then this pizza is known as Pizza Margherita, and Don Raffaele is credited with its invention, even if we know that it already existed for a long time.</p>
<p>At the beginning of the last century, with Italian immigrants, the first pizzerias appeared also in the United States, where pizza has become a mass phenomenon. Yet, even today the best pizza is found in Naples, where it is rigorously made with buffalo mozzarella. Superior pizzas are considered those obtained by moderate variations of the simplest and most popular: Pizza Napoletana with tomato, garlic, oil, and oregano; Pizza Margherita; Pizza Marinara with tomato, anchovies, capers, and olives; and Pizza Four Seasons, divided in four quadrants, each dressed in a different way. Pizza with hot salami, the American pepperoni pizza, is instead found in the Calabria region south of Naples, where this type of hot sausage is produced.</p>
